This raspberry coconut smoothie came together thanks to two very different things: an unforgettable summer heatwave and a friend asking for recipe ideas for a project close to my heart. Sometimes the best recipes aren’t carefully planned. They simply happen because the right ingredients, the right moment, and a little inspiration come together.
When my friend J. asked if I could develop a few recipes for a summer campaign, I immediately said yes. The project revolves around the fruit hedges planted in Luxembourg City by the Service Forêts. I absolutely loved the idea.
We often walk past fruit-bearing plants without even realizing what they are. Projects like this encourage people to reconnect with seasonal ingredients and appreciate just how much nature has to offer, even in an urban environment. Better yet, they’re a wonderful way to get children excited about local fruits and plants through hands-on experiences.
My task was simple on paper: create a collection of easy recipes using seasonal fruits. In reality, it took a bit more thought. I wanted every recipe to feel approachable. Nothing complicated, no endless ingredient lists, and definitely nothing that would require spending hours in the kitchen. Summer recipes should be effortless. They should fit into busy days, family afternoons, and warm evenings when nobody feels like turning on the oven. That’s exactly how this raspberry coconut smoothie was born.
As I was testing ideas, Luxembourg was preparing for a serious heatwave. Raspberry Coconut Smoothie
Ingredients
- 200 g raspberries
- 4 dates pitted
- 2 tbsp desiccated coconut
- 225 g yoghurt
- 1 tbsp lemon juice
- 150 ml coconut water
Instructions
- Pit the dates if needed.
- Place all the ingredients in a blender and blend until smooth and creamy.
- If the smoothie is too thick, add a little more coconut water and blend again until you reach the desired consistency.
- Pour into two glasses and serve immediately.
